- Crab with avocado mousse is best paired with the Joseph Drouhin Lacon Mugny since the light Chardonnay with slightly acidic hints of citrus complement the delicate sweetness of the crab meat.
- The pan-seared cabillaud or cod is a good match with the Joseph Brouhin Cote de Beaune because the latter’s dry, juicy berry fruit flavors can stand up to the more robust and slightly oily texture of the fish.
- A peppery Chateau Simard Saint Emilion (a Merlot, Cabernet Sauvignon, Cabernet Franc blend) is ideal with the more aggressive flavors of the roasted duck breast with carrot and cumin mousseline
