Calling all Francophiles travelling to the Philippines’ capital city this weekend: you can celebrate Bastille Day — France’s National Day — at Old Manila, the signature restaurant of luxury hotel Peninsula Manila, on July 13.

The team of Allan Briones (Editor’s note: one of our favorite chefs!) have crafted a unique menu for the most French day of the year. Highlights of the six-course degustation dinner with matching wines include these pairings:

  • Crab with avocado mousse is best paired with the Joseph Drouhin Lacon Mugny since the light Chardonnay with slightly acidic hints of citrus complement the delicate sweetness of the crab meat.
  • The pan-seared cabillaud or cod is a good match with the Joseph Brouhin Cote de Beaune because the latter’s dry, juicy berry fruit flavors can stand up to the more robust and slightly oily texture of the fish.
  • A peppery Chateau Simard Saint Emilion (a Merlot, Cabernet Sauvignon, Cabernet Franc blend) is ideal with the more aggressive flavors of the roasted duck breast with carrot and cumin mousseline
