Meet the locals
It’s a common story in the province: student leaves hometown to study in the big city and, after graduation, no longer wishes to return. Thankfully this wasn’t the case for restaurateur Tin Escober. After her college years in Cebu, she returned to Catbalogan (the capital of Samar) to apply her learnings. Her recently opened restaurant, Primo, sports a hipster vibe and serves up a respectable Milanese osso bucco (braised veal shanks). Asked why she chose small town over big city, Tin’s reply comes easy: “The lifestyle here is so much healthier, and you’re always among friends; it was always my plan to return here and help our city develop.”
